BOGO at Sweet Tomatoes - Day 117

Mike had the "day off" today, but actually spent the whole day working on cleaning and decorating for our annual holiday open house this weekend. He did a fantastic job with the back porch and I decided he should be rewarded with something besides turkey leftovers. I pulled out my BOGO coupon to Sweet Tomatoes that expired today and off we went to eat and run errands. I know I am a broken record when it comes to using coupons...especially BOGO coupons from Sweet Tomatoes, but it is such a good deal. Mike and I had a great, fresh, somewhat healthy meal for two for $15.39. The soup choices tonight were very good. I had a turkey and ham cassoulet soup...like a white bean stew with lots of turkey and chunks of ham. It was actually very good.

My best laid plans of going on a Christmas decoration frenzy tonight were replaced with relaxation with Mike in front of the TV tuned to Monday Night Football. He will be in Gainesville tomorrow and the frenzy will have to wait until then.

Geni sent me an e-mail this afternoon with a picture of her mother-in-law and her much appreciated HeartSong Cookie basket. It will make a nice addition to my smile collection. Thanks for sharing, Geni!

Yummy Turkey Day Leftovers - Day 116

One of the many things I love about Thanksgiving is the leftovers. A few days after the big day, I make turkey hash...an incredibly easy and tasty dish. Tonight was hash night. I began by sauteing chopped onions in a little olive oil. Then I added fresh corn cut off the cob, cubed Yukon gold potatoes, a few pinches of a spice blend, salt, pepper, a few bams of Emeril's Essence, Worcestershire sauce and hot sauce to taste. I covered and cooked for about 10-15 minutes or until the potatoes were almost done. Then I added chopped turkey, chopped crispy bacon and cooked for another 5-10 minutes. I served with a sprinkle of shredded Parmesan and a bottle of hot sauce on the side. Judging by the clean plates, I think everyone liked it as much as I did.

Quite A Swan Song - Day 115

Tim Tebow and the rest of the 2009 Gator seniors and some juniors played their last game in the Swamp. They went undefeated in the regular season. They defeated their in-state rival, Florida State, 37 to 10. They did it with style, grace and filled the hearts of a record crowd at Florida Field with happiness. Mike and I witnessed football history...and life was good! Happy Dance!!!!!!

Black Friday...A Cherished Tradition - Day 114

I am all about tradition and for over 10 years on Black Friday, my good friend, Vicky and I embark on a shopping, eating and talking adventure that lasts most of the day…or until our energy or money runs out. Today was another one of those wonderful days. Vicky picked me up at 8:30. Both of us had scoped out Wednesday’s paper and had coupons in hand. We developed a plan of attack on the fly and headed for stop one at Stein Mart, then it was on to JoAnn’s for tulle to wrap cookie baskets. Next was a disappointing stop at Lowe’s for .99 poinsettias that had sold out 2 hours earlier before our adventure even began. Our tummies were getting a little restless, so we headed for breakfast at Cracker Barrel. I ordered the Holiday Sampler…more food than anyone needs for breakfast, but I “sampled” most all of it on my plate. Fried eggs, a sausage patty, slice of bacon, county ham, hash brown casserole, grits, fried apples, a cinnamon biscuit and regular biscuit with sausage gravy. I don’t even want to know the calorie count! I waddled out the door and on to the next leg of our adventure…Michaels for more cookie basket fixings. In between it all Vicky and I solved most of the problems of the world. We talked politics, parenthood, marriage, health, love, friendship, and business…our future cookie business.

About this time my son Ryan called to say he was heading home to grab his stuff before heading back to North Carolina. So…Vicky and I headed home as well for hugs and goodbyes. We stopped by Vicky’s home to check out the beautiful quilts she is making for each of her kids. Believe it or not, we were actually hungry again, so Chipotle was next for burrito bowls and more conversation. We headed to World Market for coffee mugs…the coolest stackable mugs with kitschy graphics depicting famous cities around the world and then stopped at Marshalls for pants for Ryan and a new Gator hoodie for game day tomorrow. TJ Maxx/Home Goods, Ross and another Michaels stops were thrown in along the way and the day wrapped up with a hug around 5:30. I was pooped, poor and totally content.

Spending this day each year with Vicky, one of my forever friends is a tradition that I hope will never end.

A Very Happy Thanksgiving - Day 113

This morning I was greeted in the kitchen with a big hug from my son Ryan. It was the perfect way to begin my favorite holiday of the year. I love the planning, the prep and the flavors. But the best part is sharing time with family and friends. Today we had an abundance of everything. Ryan kept me company throughout the morning as I made a variety of side dishes...Mashed Potatoes, Sweet Corn Pudding, Yucky Broccoli Casserole, Roasted Butternut Squash and Roasted Brussel Sprouts with Bacon. These were accompanied by Smoked Turkey and Dressing from Bubbalou's Bodacious Barbecue, a Roasted Turkey Breast, Michael's Mac and Cheese, Mom's Green Beans Almondine, Kenda's Chocolate Chip Banana Bread and Cranberry Orange Walnut Bread, Jo's Deviled Eggs, Yeast Rolls, Pickles, Olives, Mom's Cranberry Orange Walnut Sauce, Pumpkin Pie, Apple Pie, Pecan Pie and lots of wine. We truly have so much to be thankful for!

A Filling Day - Day 112

Filled to the brim and its not even Thanksgiving yet.

Wow, my day began with a smile explosion. I dropped off two cookie baskets to Geni that she ordered for her family. She was pleased...almost giddy. Then the whole department dove into the Thanksgiving basket I made for them to share, Dennis, Kristy, Lori and Geni humored me with pictures for my smile collection. I floated out the door very pleased with the result of my efforts.

I floated over to see Jen and Tim for another well received cookie drop. And then met with my client, Michael to go over a proof with cookies tucked inside. Smiles were plentiful...sugar highs were on the rise...life was good. And that was just the morning!

Tonight my son Ryan asked us to go to see the movie, Blindside. It is the true story of Michael Oher, a homeless high school kid adopted by a Memphis family and drafted in the 2009 NFL draft. The movie stars Sandra Bullock and Tim McGraw. I really needed to stay home to prep for Thanksgiving, but I couldn't pass up a date with my two favorite men...Mike and Ryan. I teared up many times throughout the movie and came away with a full heart. This movie was about "the Power of Good" squared. I would highly recommend it!

I just finished taking the pumpkin pie out of the oven and plopped down on the couch to relax while it cooled. As I reflected on my day and all I have to be thankful for, a hug smile showed up on my face. I am truly blessed with the most wonderful life. You know, I think it is time for a happy dance!

More Cookies...More Smiles - Day 111

Today I drove to Tampa to talk about a project and deliver cookies to my friends. Along the way, I added to my smile collection. After seeing the cookie basket, Kim gave me a new nickname - "Martha". I took it as the ultimate compliment.

Tonight was filled with more cookie baking and hopefully tomorrow will be filled with lots of smiles. Since it is very late and Mike is trying his best to sleep, I will cut this posting short. Sweet Dreams!

Rehearsal Dinner Recipes...Finally - Day 110

Bree and Jason's rehearsal dinner was a tremendous success. Everything was not perfect, but was very tasty and seemed to be enjoyed by all. I take that back...the Baked Garlic Cheese Grits and the Chocolate Chip Bread Pudding with the Cinnamon-Rum Sauce were Mmmmmmmmm perfect!

Smothered Andouille Sausage and Shrimp

Ingredients:
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup chopped onions
1/2 cup chopped green bell peppers
1/2 cup chopped celery
Salt
Cayenne pepper
1 pound andouille sausage, sliced 1/4-inch thick
1 1/2 pounds medium shrimp, peeled and deveined
2 3/4 cups clam juice or chicken broth
1/4 cup heavy cream
1/4 cup chopped green onions
1 recipe Creamy Stone Ground Grits, recipe follows
Chopped fresh parsley leaves, for garnish

Directions:
In a saute pan, over medium heat, melt the butter. Stir in the flour and cook for 4 to 6 minutes for a medium brown roux, about the color of peanut butter. Add the onions, peppers, and celery. Season with salt and cayenne. Continue cooking until the vegetables are wilted, about 8 minutes. Add the sausage and continue to cook for 2 minutes. Season the shrimp with salt and cayenne. Add the shrimp. Stir in the clam juice and cream. Bring the liquid to a simmer and continue to cook for 8 to 10 minutes, until the mixture coats the back of a spoon. Remove from the heat and stir in the green onions. To serve, spoon the grits in the center of each serving bowl. Spoon the shrimp mixture over the grits. Garnish with parsley.



Baked Garlic Cheese Grits

6 cups chicken broth
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
2 cups regular grits
16 ounces Cheddar, cubed
1/2 cup milk
4 large eggs, beaten
1/2 cup (1 stick) unsalted butter
8 ounces grated sharp white Cheddar


Preheat the oven to 350 degrees F. Grease a 4-quart casserole dish.

Bring the broth, salt, pepper, and garlic powder to a boil in a 2-quart saucepan. Stir in the grits and whisk until completely combined. Reduce the heat to low and simmer until the grits are thick, about 8 to 10 minutes. Add the cubed Cheddar and milk and stir. Gradually stir in the eggs and butter, stirring until all are combined. Pour the mixture into the prepared casserole dish. Sprinkle with the white Cheddar and bake for 35 to 40 minutes or until set.



Chocolate Chip Bread Pudding with Cinnamon-Rum Sauce

Ingredients:
1 1-pound loaf brioche* or egg bread with crust, cut into 1-inch cubes
10 tablespoons (1 1/4 sticks) unsalted butter, melted
1 cup semisweet chocolate chips
2 1/2 cups half and half
1 cup sugar
6 large eggs
4 large egg yolks
2 tablespoons vanilla extract
1/8 teaspoon salt
2 tablespoons (packed) dark brown sugar
Cinnamon-Rum Sauce

Preparation:
Preheat oven to 350°F. Butter 13x9x2-inch glass baking dish. Place bread in large bowl; pour 8 tablespoons melted butter over bread and toss to coat. Add chocolate chips and toss to combine. Transfer mixture to prepared dish.

Whisk half and half, 1 cup sugar, eggs, egg yolks, vanilla extract, and salt in large bowl to blend. Pour over bread cubes in dish. Let stand 30 minutes, occasionally pressing bread cubes into custard. (Can be prepared 1 day ahead. Cover and refrigerate.) Drizzle remaining 2 tablespoons melted butter over pudding; sprinkle with brown sugar. Bake bread pudding until puffed, brown, and set in center, about 1 hour. Serve warm with Cinnamon-Rum Sauce.

*Brioche is a golden, light bread made from egg- and butter-enriched yeast dough. It is available at French bakeries and some large supermarkets.

Cinnamon-Rum Sauce

Ingredients:
1 cup (2 sticks) unsalted butter
1 cup (packed) dark brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup dark rum
1 tablespoon vanilla extract

Preparation:
Melt unsalted butter in heavy medium saucepan over medium-low heat. Add dark brown sugar, ground cinnamon, and salt and whisk until sugar is dissolved and mixture is bubbling and smooth, about 6 minutes. Remove from heat. Whisk in dark rum and vanilla extract. Serve warm.

(Cinnamon-Rum Sauce can be prepared 2 days ahead. Cover and refrigerate. Rewarm over low heat, whisking occasionally, before serving.)
yield: Makes about 1 1/2 cups

Any leftover sauce would also be terrific served over ice cream.

A Special Gift - Day 109

I can't believe it has been over a week since Bree's rehearsal dinner. The days prior to the dinner were especially hectic and the days after were ultimate relaxing bliss. In my haste to leave for vacation I neglected to share a beautiful thank you gift I received from Bree's mom, Phyllis. For the last couple of months, Phyllis has been working on a very special gift for me...a gorgeous hand woven cookbook basket and beautiful apron presented to me after the dinner. The thoughtfulness almost took my breath away. Years ago I took a basket weaving class, so I know the time and patience it takes to weave a basket...especially one this perfect. The apron was bright and cheery and perfect as well. Both will be enjoyed during Thanksgiving, my favorite holiday, and for many years to come. Thank you Phyllis! The "Power of Good" is alive and well and resting on my kitchen counter.

The Exclamation Point - Day 108

Today game day took on a new look. No packing the car with chairs, tables, a grill and coolers. No buying ice. No planning what to cook. Just a nice drive from Savannah arriving about 45 minutes before the game began. Newberry Barbecue pork sandwiches, fries and sweet tea were savored amongst the crowd of fellow Gators in the stands. For Gators there was a lot to cheer about today. We outmatched the opponent FIU...62 to 3. The weather was nice. The game was good. And the time spent celebrating with my husband was wonderful. This was the perfect exclamation point on our vacation! Aaaaaah...

Fabulous Savannah - Day 107

Day 106 Continued - Last night Mike was hoarding the computer, so I couldn't post anything about our delicious trip to Watts Grocery in Durham, North Carolina for dinner. Yes, the name of the restaurant is a little strange, but the food was fabulous. Watts Grocery was named by the chef, Amy Tornquist, after Watts St. Grocery, a favorite childhood haunt for candy and treats in her North Carolina neighborhood. Amy features food from within a two hour radius of where she grew up. I love the fact that she is a localvore. Mike and I opted to go the appetizer route for dinner. I enjoyed bourdin sausage beignets and a butternut squash salad. Mike savored smoked trout on homemade crackers with fennel salad and fried oysters over a bed of red cabbage and bacon. Ryan dined on braised short ribs over parsnip puree with slow cooked greens. And if that wasn't enough, Mike added a side of hush puppies with basil aioli...Mmmmmmmmm! Watts features beer on draft from local North Carolina breweries. Mike tried a couple and seemed quite happy at the end of the meal. All in all, this was a wonderful ending to the best week I have had in a very long time.

Now Day 107! This morning we left Raleigh to head to Savannah for the next leg of our vacation. We stopped for breakfast at Bojangles in Dunn, North Carolina. I think the entire elderly population of Dunn decided to join us. The chicken biscuit I ordered was delicious and the coffee gave new meaning to the term "hot". I don't think my tongue will ever recover. Watching the seniors come together was pretty cool. I couldn't help but smile at the woman next to us sporting a John Deere purse.

We made it to Savannah just in time to stand in line at Mrs. Wilkes' Dining Room for "dunch". Mrs. Wilkes is an extremely popular restaurant that serves Southern comfort food in a family style setting. It is only open for lunch from 11-2 and does not accept reservations, so expect to wait. But also expect to come away totally satiated and happy. Kristina, one of our table mates, made a list of all of the items we were served.

Mary Helen, You Will Always Be With Me - Day 106

My hero, Mary Helen passed away last week and her service is being held today in Orlando. I am in Raleigh and will miss the service. It makes me sad, but I am so thankful I had the time with her a week ago to say goodbye when she could still make me smile. Her sense of humor through the cancer battle is something that will never leave me...it permeates my very soul. I love you Mary Helen.

Dreary Weather, Cheery Day - Day 104

Today Mike and I embarked on an adventure to the Outer Banks. Unfortunately the beautiful weather we had been experiencing decided to take a vacation. We stopped for lunch at a delightful little hole in the wall called Blue Moon Beach Cafe in Nags Head. For starters we had a cup of Fisherman's Stew filled with fish, crab and scallops in a creamy rich chowder base. Yum! I had a Crab Cake Sandwich and Mike had a Buffalo Oyster Salad. Both were delicious!

After lunch we drove to the Bodie Island lighthouse and took the mini nature walk to burn off some of our recent calorie intake.

Then it was on to the Wright Brothers Memorial in Kill Devil Hills near Kitty Hawk. I wasn't expecting much, but the museum was really quite interesting and the view from the top of the hill at the memorial site was quite beautiful. We actually saw our first glimpse of blue sky from the top.

Happy Birthday Ryan! - Day 103

The great days just keep coming! Today was my son Ryan's birthday. Unfortunately he had to work, but we met him late this afternoon for a tour of Carter-Finley Stadium and the Murphy Center. Being the sports freak that I am, I was in heaven. We got to go into the locker room while the team was at practice. I even got a picture of my new favorite quarterback's locker - Russell Wilson. He is the star player from NCSU, who tried one of my cookies earlier today and said they were really good. That was all it took to make me a fan for life. After the tour Ryan took us to watch the team practice for this weekend's game against Virginia Tech. Ryan introduced us to the head coach, Tom O'Brien. I am as giddy as a school girl.

Mike took us to Maggiano's in Durham to celebrate Ryan's birthday. We gorged ourselves on fried calamari, fried cheese, salad and fabulous pasta and chicken entrees. Oh my, it was such a great evening. I haven't felt this relaxed and happy in months.

Rendezvous With The Pit Master - Day 102

Today was a great day filled with birthday shopping and baking for Ryan. I haven't had a moment of time or money to shop in months. Shopping is something I used to do all the time...which is a big reason I am cash starved. Now I shop more carefully and relish every purchase. This afternoon I baked Ryan's favorite yellow cake with fudge frosting and toasted pecan chocolate chunk cookies while he was at work. He is turning 23 tomorrow and I wanted to surprise him.

I don't think it was much of a surprise, but the smile on his face told me he was pleased. For dinner Mike took us to The Pit in downtown Raleigh. It is an incredibly good barbecue restaurant in the warehouse district. The atmosphere is a little upscale, but still warm and comfortable. Ed, the Pit Master, graced us with his presence. The food was delicious, but the highlight of my night was the photo Mike took of me with the Pit Master. He has been featured on Food Network and Bon Appetit...both favorites of mine.

Farmers Market Delight - Day 101

My week of relaxation continued with the ultimate wonderful midday delight...a visit to the North Carolina State Farmers Market restaurant for lunch with my son Ryan and then a walk through the market itself. This restaurant serves Southern food at its best. I had the turkey and dressing with mixed greens, succotash, to die for biscuits and banana pudding. At the market I bought Pink Lady apples, a half gallon of fresh North Carolina apple cider and some homemade lavender soaps, sachets and body lotion. The scent of lavender always has a way of putting a smile on my face. I think of California, Victoria, calmness and beauty. Happy dance!

Finally...Relaxation - Day 100

I can't believe I have been posting for 100 days now. All it took was a dare from my son Ryan that I would never keep it going. And here I am, Day 100. It seems like it has been at least 100 days since I took a breath and stopped to relax.

Today began early with the alarm going off at 5:00 a.m. Oh my goodness, I was still so tired from the previous week! But I had extra motivation to get going...I was flying to Raleigh to spend the week with Ryan. My flight arrived at 10:25 a.m. and Ryan whisked me away to Carter-Finley Stadium to watch the NC State - Clemson game at noon from the press box. How cool is that? We got to partake in the media meal, which I was told was much better than the usual fare. The spread included fried chicken or sausage biscuits, broccoli cheese casserole, home fries, eggs, pasta with sausage and peppers, fruit and poppy seed pound cake. Everything was actually quite tasty and the best part for this cash starved foodie is...IT WAS FREE!

I wish the game had been as enjoyable as the food and the company. Unfortunately NC State lost 43-23. Ryan and I had to leave in the third quarter to go to the Women's Basketball Tournament going on in another part of campus. This time I got to sit court side. Again something I had never experienced and very cool. Unfortunately once again NC State lost, this time to Vermont in the tournament championship game. After the game, I got to attend the post game press conference with their new coach, Kellie Harper. I liked her a lot. She hates losing and so do I.

The Gators managed to extend their winning streak to 20 and are still undefeated. Once again I feel like a spoiled brat because the offense was stagnant much of the second half. I know this team is something special and yet very difficult to watch.

All this may not seem very relaxing to you, but to me, it was an amazing day. I got to take a peek into the career path of my son and it made me very pleased. He has followed his passion and that is a very good thing!

A Great Day Dedicated To My Hero - Day 98

My morning began with the sad news that my hero Mary Helen passed away last night. I am so thankful her pain is over, but will miss her very much. I knew this day would come, but could not help but feel so sad. Unfortunately I will be in North Carolina next week when they have her service. Mary Helen would want me to spend the time with Mike and Ryan and that is what I am going to do.

I am truly blessed with the most wonderful mom and friends that came to my rescue as I fell apart this morning. My mom, Kenda and Vicky all arrived and pitched in to get me out the door with the makings of a wonderful rehearsal dinner for Bree, Jason and their friends and family. My mom and Kenda worked through the afternoon and evening to make the event memorable for everyone. Vicky stayed behind and made several batches of the Cinnamon Rum Sauce to go over the Chocolate Chip Bread Pudding we were serving. She even delivered it to me. But the best part of all, Vicky went back to my house and cleaned my kitchen. And when I say "cleaned", I mean cleared away all the clutter and made the kitchen look immaculate. Did I mention that I have the best mom and friends in the entire universe?!

The evening was a tremendous success. We began with puff pastry appetizers, roasted asparagus wrapped in prosciutto, marinated olives, cheese, salami and crackers. My mom helped Bree and Jason mix Hurricanes as a tribute to New Orleans where they got engaged. Dinner was served buffet style. We feasted on Baked Garlic Cheese Grits, Smothered Andouille Sausage and Shrimp, yellow rice, garlic bread, and salad. Dessert was the best part...Warm Chocolate Chip Bread Pudding topped with Vicky's delicious Cinnamon Rum Sauce and a squirt of whipped cream. It was really good! Must have been that Power of Good Challah Bread that did the trick.

A day that began with such sadness, ended with tremendous happiness and satisfaction. With the help of my friends, we brought a magical night to a lot of people. I dedicate this great day to my hero, Mary Helen. She will always be in my heart.

The Power of Good Challah Bread - Day 97

Today was the first day of my 1 1/2 week long vacation and guess where I spent the first half of the day?! Yep, I went to work. I couldn't get everything wrapped up yesterday, had one more basket to deliver to Carolyn and dropped off a cookie basket for Danielle as her going away present. Danielle is moving on to work at a local law firm. Her smile will be sorely missed.

The rest of the day was spent errand running at a frantic pace to prepare for Bree's rehearsal dinner tomorrow. Tonight I met Bree and Jason at the site of the dinner to stage the buffet and work out last minute details. Then it was on to my quest for challah bread for the chocolate chip bread pudding I was making for tomorrow's dinner. The Publix I visited this afternoon was out. So were the two other Publix supermarkets I visited tonight. My last resort was a TooJay's deli near my house, but by this time it was 9:30 p.m. and I was sure they were closed. As I approached the locked front door, an employee took pity on me and came to the door. I told him I was in search of two loaves of challah bread. "Two loaves, not sliced?" he said. Yep, that is what I need! He closed the door, headed behind the counter and reappeared with two whole loaves of beautiful challah bread. He handed them to me from behind the partially opened door and refused my offer to pay. With a sly smile on his face, he said "Just don't tell anybody"!

I would love to oblige this kind soul's request, but the story of his generosity needs to be shared. I have a new love of TooJay's and will definitely head that way soon when I am contemplating dinner out. He saved the challenge of the day and for that I am very grateful. This is the "power of good...challah bread"!

I Collect Smiles - Day 96

Some people collect art, some collect jewelry. Others collect antique cars. I collect smiles. The joy I see on the faces of my cookie recipients is priceless. It is the reason I end almost every day in the kitchen baking cookies and begin almost every day assembling baskets. Yes, I get tired, but the smile I know is coming at the end of all the effort keeps me going.

Dream Encourager - Day 95

Today began for me in the usual way...bagging cookies and assembling baskets. I put two together for Carolyn and dropped them off to my friend Vicky to photograph while I delivered a disk to a client. Once again Vicky did a great job with the photos. My feeble attempts at photography with my iPhone just don't compare.

I can't believe I only have one more day of work before I am on vacation for a week and a half. That is the longest time I have been away from the office in years. Believe me, I am more than ready for a vacation. The grind of working seven days a week has taken its toll on me.

After work tonight I met my friend Sheri at her office and followed her home to see her husband David's garden and share my plans for my cookie business. David is an excellent cook...no...chef. He also is a master gardener. The "Juanita" side of me almost couldn't control myself from picking the Japanese eggplant hanging from the vine in his garden. David listened intently as I shared the stories of my blog beginnings and my pre-blog lack of confidence in my baking abilities. He is a fellow foodie with a passion for pleasing others with his cooking talents. David has a dream of starting a catering business, but suffers from the same affliction I have...lack of funds and lack of confidence. I know he will be successful and I will do whatever I can to encourage him to follow his dream.

Tonight is a night just like any other night...a baking cookies night. I am baking White Chocolate Blueberry Pecan, Toasted Pecan Chocolate Chip and Dark Chocolate Tri Berry Cookies for the next round of Carolyn baskets. Mmmmmm, they smell good and definitely pass the eye test.

Making Lists, Checking Them Twice - Day 94

This morning was spent catching up on yesterday's posting, making lists, surveying the my disaster of a house, and watering my much neglected plants. I am definitely paying the price for goofing off yesterday.

Work at Costco was slow...giving me time to make more lists and write today's blog. The week ahead is filled with lots of good stuff that requires supreme organization. I love check lists when I have a lot on my plate (when don't I lately?!). It gives me a sense of accomplishment as I check off items, saves me from my forgetful tendencies and allows for many happy dances.

Tonight I made a trial run of the Smothered Andouille Sausage and Shrimp I am serving at Bree's rehearsal dinner on Thursday. This time I served it over yellow rice instead of grits with a side of roasted asparagus. Judging by Mike's trip to the kitchen for seconds, it was a tremendous success. My brother stopped by after Mike and I had finished dinner and I warmed him up a plate. He also seemed to enjoy it. The recipe is extremely easy and I am feeling more at ease making it for a group. The trial run gave me a better sense of how much to make and timing for serving.

Dessert was a pleasant surprise...a call from by life buddy Victoria. Talking to her makes me feel so calm and centered. Victoria and I are polar opposites. I move at a frantic pace. Victoria moves and talks at a more relaxed pace. A call from her was just what the doctor ordered. I was starting to hyperventilate after reviewing the items on my lists.

Cookies for Carolyn were next on the agenda. I only baked two flavors - White Chocolate Blueberry Pecan and Cranberry Chocolate Chip Pecan. I think I yielded enough for two of her four clients. Yay! I can cross something else off my list. Happy Dance.

Game Day Good - Day 93

Mike and I had a leisurely start to the day. We finished loading the car for our trek to Gainesville, stopped by Starbucks for Artisan Breakfast sandwich and coffee pairings (not bad for Starbucks at $3.95) and hit the road. I talked Mike into taking the back roads through Zellwood farms, over Little Lake Harris and by my favorite bakery - Yalaha Country Bakery. I just couldn't convince him to stop.

The "Power of Good" paid big dividends today. When we arrived, the parking spots around our tailgate area were taken. We had to park across the street and lug our stuff through traffic to set up our tailgate. The parking lot attendant that guards the Gator booster lot took pity on us and quietly told us she would allow us to park in the special lot. Years of sharing our tailgate treats with her paid BIG rewards. This too is the "Power of Good".

Mike and I had the entire afternoon to continue the leisurely pace of the day. We arrived at around 11:30 and the game did not start until 7:15. Kent, Kevina and Melissa arrived late afternoon and the feasting began. We snacked on Cajun boiled peanuts while I grilled Aidell's Chicken Teriyaki Meatball and fresh pineapple skewers brushed with a Japanese barbecue sauce. Then it was on to Cajun marinated shrimp and andouille sausage skewers. We served it all with potato salad, macaroni salad, Caprese salad and grilled naan bread. Oh my, this was one of our best tailgates ever and it was all so easy.

The Gators won the game in a rather workman-like manner. They are 9 and 0 and number 1 in the country. This day was Game Day GOOD!

Cash Starved, Abundantly Rich - Day 92

My bank account may be low on funds, but my life is abundantly rich. Today was tough and one I am so glad I experienced. As I have mentioned in previous postings, by hero and friend, Mary Helen is almost at the end of her battle against cancer. She is staying at the Hospice in the Deland area. Yesterday Mary Helen summoned enough strength to call Rita and request a visit from the two of us today. I was so thrilled that she called and then the reality of the situation hit me this morning. This could very well be the last time I saw Mary Helen. What would I say? Could I mask my sadness? All of a sudden I became very anxious...

Then Rita got in the car. She has this incredible aura and a way of making everything better. She dove into the situation and I followed her lead. When we arrived at Hospice, Mary Helen was getting her hair washed. We spent some time talking to her boyfriend Ron. He prepared us for how she would look and sound. Then the door opened and we stepped inside. Before me was a beautiful soul. Her hair had grown quite a bit since we saw her several weeks ago. The nurse had styled it. Mary Helen joked that is was so BIG...very Texas! Even in her gaunt, somewhat lucid state, she joked and smiled and asked about my cookies and my life. How amazing is that? Her body is telling her it is time to go, but her mind keeps fighting and saying it is not her time yet. I brought a small bag of HeartSong Cookies for Ron and Mary Helen's daughter Carrie to share. Ron loved the cookies from a previous basket and asked me to bake a birthday basket full of hugs to ship to his uncle in Ohio. Of course I will do it!

Mary Helen made us promise to come see her again real soon. I will do it again and again until her body wins the battle. Her spirit will live on within me forever.

Lending a Hand - Day 91

Today began with basket and bag assembly for the cookies I baked last night. I was pleased with the results and hoped they would please Carolyn as well. Unfortunately I couldn't reach Carolyn, so I left them in her office and hoped for the best.

For lunch I met my friend Bree at...Sweet Tomatoes. Yes, once again I have been to ST three times in a week. I can't help myself. It is BOGO coupon time. Bree treated me and I contributed the coupon. We worked out more details of her rehearsal dinner and wedding day. This weekend I need to do a trial run of the menu - Shrimp and Andouille Sausage over Baked Garlic Cheese Grits and the Chocolate Chip Bread Pudding with Cinnamon Rum Sauce. Bree and Jason got engaged in New Orleans, so the rehearsal dinner will have a Cajun theme and it is happening in exactly one week from today. Kenda and my mom are helping me with the catering. The menu is simple, but I am also the wedding coordinator and will be at the rehearsal when I need to be cooking. I have to make sure I have a plan and do a lot of delegating. Delegating is not my strong suit. I like to be in control.

When I left lunch, I noticed a message from my friend Rita. Since our good friend Mary Helen is now in hospice care, I pause every time I see a Rita call. This call was a good one. Mary Helen called Rita today and asked for the two of us to come see her. We are going tomorrow at lunchtime. Mary Helen's cancer battle is the stuff legends are made of. She continues to fight through extreme pain with grace and humor. My "Power of Good" movement is dedicated to Mary Helen. Everything about her exudes good.

One of my co-workers is having some rather extreme personal problems which have resulted in depression and anxiety attacks. During the last week, I have tried my best to lend a hand with hugs, positive reinforcement, and ideas for ways for her to battle through the depression. She was very anxious about driving across town to pick something after work. I offered to have her follow me. I put big Gator magnets on the back of the car...she is a huge FSU Seminole fan. The I told her to focus on the "ugly" Gators and I would get her to her destination...anxiety free. It worked. She actually even smiled once we got there. Something very rare on her face these days. This was "the Power of Good" at work again.

It's All About Me! - Day 89

Today began with an ultrasound sandwich. No food and drink and an abdominal ultrasound was first on the agenda. Then I raced to Einstein's Bagel for a pumpkin bagel and Autumn Roast Coffee with a touch of cinnamon enjoyed on my way to work. Lunch was an educational seminar on digital papers sponsored by Mac Papers. The Chicken with Tarragon I ordered was actually decent for banquet fare. Then it was on to another ultrasound, this time of my pelvis. If you ever want to experience true torture, try drinking 32 ounces of water, waiting an hour until your bladder is about to burst and have someone squirt ice cold gel on you abdomen while they press a scope all sorts of places down there. Oh my...it was the worst!

Since I had to work late and endure the ultrasound torture, I decided to pretend I was not cash-starved and treat myself to an old favorite haunt for take out - Antonio's in Maitland. Tonight it was all about me! I ordered Lasagna Bolognese to go. And noticed it required 20 minutes to cook, so I took my pretend wealth to a new level and ordered a glass of Chianti while I waited. I toured their wine section with glass in hand gazing at all the options I could never afford. It was very relaxing. Soon the bag was ready and off I went to enjoy an evening at home. No baking. No cooking. Just the perfect portion of the perfect lasagna for the perfect tribute to me. Everyone needs to take the time to pamper themselves every once in a while. Try it...it is intoxicating.

A Big Step - Day 88

Today I took a big step toward starting my own business. I opened an account with my business manager, Kenda. The amount I deposited was somewhat insignificant, but the impact was profound. Next step is a business license.

Unfortunately I am still feeling funky. So bad in fact that I went to an urgent care clinic this afternoon and am having an ultrasound in the morning. The doctor thinks I may be having gall bladder trouble. This may finally jolt me into a healthier diet and more exercise...definitely something that needs to happen regardless of the test results. So please bear with me tonight. The impact of my big step was profound, but my blog posting is not.

"Lovely" Woman Makes An Impression - Day 87

This morning Mike and I had a leisurely start to the day. I brought us breakfast in bed - oatmeal, coffee and banana bread. We watched the replay of the Gator game. I watched the part I missed from yesterday and then took off for Lowe's to buy plants to refresh all our sad looking planters. Then it was on to work at Costco. Thank goodness I had my old spot back and traffic was substantially better than yesterday. I sold more wine in the first two hours than I did the entire four hours yesterday. Hopefully this will make Joe a little happier than yesterday. Of course it cannot match the 100 plus bottles Joe magically sells in 10 minutes every time he is on his own. I don't think I will ever be the salesperson Joe is. Carnival Barker is not my style.

People watching hit a new low today. There was a woman, her young son and teenage son that approached the aisle where I was located. A gentleman was inquiring about my wine and accidentally blocked part of the aisle. Instead of politely asking the gentleman to move, they jerked the cart out of the elderly man's hand. I was appalled and had to say something. I blurted out "Thank you for being so nice!" in my most sarcastic voice. The "lovely" woman yelled out as she disappeared down the aisle "Thank you! And what is your name?!" I told her and really hoped she would report me. What would she say? That I accused her of being something she was not...NICE?! I cannot believe the disdain and hate that emanates from some people. She is definitely a member of "The Power of Poop"!

Dinner was a Take and Bake Pepperoni pizza on special at Costco for $6.99. We asked our roommate Jim to join us for dinner. This was definitely a meal fit for the cash starved. I washed it down with some Montepulciano d'Abruzzo. Aaaah, a pleasant ending to the day.
