Good Things Are Coming - Day 179

The "Power of Good" invaded my dreams last night. I can't stop thinking about it! I must find a way to incorporate my love of baking, extreme desire to do something to give back to society and my overwhelming need to work with my friends, all into the "Power of Good" (POG).

The first step will be setting up the "Power of Good" website. I plan on registering the domain name when I finish this posting tonight. I want the website to be a forum for information about good deeds, good people, good businesses, good charities, good products, even good recipes...all that is good in this world.

While at work today at Costco, I must have been channeling the POG vibes. Person after person stopped by to talk and share stories of trips to Italy and Costa Rica, favorite bottles of wine, dogs they adopted, dinners out with family...all the good stuff in life. I saw old friends I hadn't see in years - Kelli and Mark; old friends I just saw yesterday - Carolyn and her mom; new friends - Bev, the former Costco bakery demonstrator; my hairdresser, Sheri; my client, Joanne and my client, Dave. It was quite a party.

The fishing demo person even stopped by to drop off a handful of chocolate kisses just when hunger and boredom were getting the best of me. Good is in the air today!

After work I met Mike at PF Chang's to satisfy his craving for Chinese. We planned to share an entree to save a little money, but were pleasantly surprised they now offer a special menu daily from 3 - 6 pm. Each price point from $3 to $6 offers several drink and full size appetizer options. We ordered a pot of green tea, dumplings, lettuce wraps, ribs and fried rice. The food was good and the bill easy on the wallet. The restaurant business has definitely done its part to address the changing economic times.

Momentous Day - Day 178

On the surface this day may not have seemed so special. It began like most days with a shower, blow dryer, curling iron and makeup. But then the special part began. Mike and I got in the car TOGETHER...a rare occurrence with our crazy disjointed life. We embarked on a trip to work to pick up THE PROJECT, the project from hell, and the source of all my angst this week. When we arrived at the office, I actually was filled with a little apprehension. What had we missed in all our haste? Actually very little. The completed miracle magazine looked pretty darn good. I thought my client would be pleased. The big hug and sigh of relief I received upon delivery validated my thoughts. She was pleased...very pleased. Her reaction made me almost forget the road traveled this week to get to this point. Almost, but not quite.

I wanted to celebrate the accomplishment with some of my favorite people. My most favorite was riding in the car with me. I just couldn't get over how cool it was to actually have a Saturday with no work at Costco. A Saturday with Mike. I suggested we ask Carolyn, my fellow miracle worker, and Kenda and Mark to join us at The Ravenous Pig for lunch. To my delight, they all accepted the invitation.

Lunch at "The Pig" was as awesome as dinner earlier in the week. The menu included some of the Pub Fare dinner offerings, plus a nice selection of sandwiches and salads. I ordered a Herbed Collins, Mike a beer and pretzels. The restaurant was packed. So packed, the wait was 25 minutes on a Saturday afternoon. Our waitress stopped by to say they were out of pretzels, but had "Ugly Ends" if we wanted them. "Ugly Ends" are a smaller, more irregular version of their delicious Gruyere biscuits I raved about earlier in the week. They weren't pretzels, but they were a pretty tasty stand in...and for $2.00, they were amazing.

For the next course we ordered Mussels and Fries, another repeat. I discovered Kenda doesn't really care for mussels. Her dissection of the tender morsel and scrunched up face after it entered her mouth was priceless. That was OK, her disdain left more for the rest of us.

Each of us ordered something different for our main course. Mike had a Pub Burger, Kenda a Grilled Mahi Sandwich and Carolyn and I split a Shrimp and Oyster Po Boy. Mark was a late arrival and had already eaten lunch, but couldn't resist Mike's leftover fries and Kenda's half sandwich.

The food was outstanding, but the company was the best. It was just what I needed to release the vise and relax. I sat back in the booth and surveyed the table. I was surrounded by my prized collection of friends and amazing food. Life doesn't get much better than this.

Well...it did. I suddenly remembered the other reason for celebration. This was the day our roommate Jim was regaining his independence. This was moving day for Jim. He was vacating the awkward haven of our house and moving on into his new home. We wish him the best of luck, but are very grateful to get our life back.

Mike ordered "Pig Tails" for the table, cinnamon sugar dusted fritters with chocolate espresso sauce. And we talked, and talked and talked some more. We talked so much that none of us noticed our "Pig Tails" were taking a little long to make it to the table. We didn't notice, but management did. The manager came to the table to apologize and told us she was comping our dessert and adding a bowl of homemade ice cream. This is what makes "The Ravenous Pig" so good. The attention to detail is impeccable. They even recycle the ever changing menus into coasters under the coffee cups. It is official, I have a new addiction..."The Pig."

Miracle Workers - Day 177

Well tonight around 10:15 I finally saw the finish line on the project from hell. I signed off on the last proof and sprinted out the door. For three solid days I felt like my whole being was in a vise...a really large vise. I pushed, pulled, poked, prodded, coaxed, urged and threatened my client to get her project completed. I watched her head fall over on the table from lack of sleep as we attempted to write copy. I endured countless unreturned phone calls. I was a cheerleader...errand runner...writer...director...grumpy witch and finally miracle worker. Thank goodness for my good friend Carolyn...the true miracle worker. She worked with four hours sleep over the last three days to see the project to completion. Her art files were clean, organized and complete. She rarely complained (I did it for her) and handled the challenges with patience and grace. Carolyn is the true embodiment of the "Power of Good!"

In Need Of Comfort - Day 176

Oh my...is all I can say about today. I am still out of posting gas and the next gas station seems 100 miles away. Today was the ultimate project purgatory. The person that needs to give us copy to finish her magazine is missing in action and I am at my wits end. Thank goodness for friends that made me smile with a slice of cake and hugs along the way. By dinnertime, I needed comfort and I needed it bad. All I could think of was a turkey dinner to go from Cracker Barrel...filled with sodium, fat and yes, comfort. I ate it in my car by the light of the Marshalls sign. Hey, that sounds like a country song. Why Marshalls, you ask? I received a gift card from Mike for my anniversary and needed a laptop bag to lug my newly inherited laptop around to finish this damned project.

Ravenous No More - Day 174

Thanks to a generous Christmas gift from Mike's boss, Mike and I enjoyed a two part anniversary celebration. It began on our anniversary night at Maggiano's with a wonderful Italian dinner and ended tonight at The Ravenous Pig with one of the best meals I have had in a very long time.

Over the last year several friends have recommended The Ravenous Pig. Cash starvation prevented the experience...until tonight. It was certainly worth the wait. I love locally owned restaurants. But I especially love restaurants that think outside the box and experiment with interesting, fresh flavor combinations. This fits The Ravenous Pig to a tee. The menu is fun, flavorful, fresh and changes seasonally. Prices are not cheap, but portion size and quality make them an excellent value. The main menu is divided into several sections including Pub Fare, Salads, Starters, Homemade Pastas and Entrees. The majority of their wines are offered by the glass. They have an extensive specialty cocktail menu, as well as microbrewery draught beers from around the country. A sinful selection of dessert choices sends the dining experience over the top.

Mike and I had a tough time making our dining selection. We went back and forth between Pub Fare items and splitting an entree. But ended up deciding on two Pub Fare items for what we thought would be Part 1 of out meal. Mike ordered Cherrystone Clam Chowder. Blue Hill Mussels with Fries was my choice. And of course we had to try their signature House-Made Gruyere Biscuits with Smoked Sea Salt Butter. These delectable morsels of decadent goodness were the first to arrive. Oh my, I thought, if the rest of the meal is half as good as this biscuit, I will be in heaven. Then came the Mussels and Fries. The bowl was filled with melt in your mouth tender mussels in an extremely flavorful broth and served with thin cut crispy truffle fries and tarragon aioli. It was absolutely perfect. Mike's Cherrystone Clam Chowder had a wonderful smoky bacon taste that still allowed the sweetness of the clams to shine through. My cocktail selection was over the top good...Herbed Collins - House-Made Sour Mix, Sonnema Herb Vodka muddled with fresh basil and cilantro. It was refreshing and a nice complement to the mussels.

Our celebration dinner would not be complete without dessert and coffee. Mike ordered "Pig Tails" - warm cinnamon-sugar tossed fritters with chocolate espresso sauce. My choice was the caramel apple vanilla rice pudding parfait. Just when I thought it couldn't get any better, Phil, out waiter brought out our coffee in individual French press pots. Press pot coffee is rich, sensual and the perfect ending to our meal. We came in ravenous and left very, very full and happy.

Happy Anniversary Mike! - Day 173

Today is the anniversary of one of the best days in my life...my marriage to Mike seven years ago. It was truly a glorious day! Every time I think of it, I get a big smile on my face.

This morning Mike had two cards waiting for me...one funny, one serious (this is our tradition). Mike has a way with words. The sentiment he wrote made me realize why I love him so much. We have endured a few years of tremendous financial challenges. Due to our strange arrangement of Mike's job in Gainesville and mine in Orlando, we see very little of each other. Mike commutes 2-3 times a week back and forth from Gainesville. I work seven days a week. Mike is taking classes to become a certified medical technologist. I bake to relieve the stress. I write a daily blog to relieve stress. Man, do I have a lot of stress! Mike plays with Maddie, our dog. We have a roommate. Mike cleans the house while I work on the weekends. I do very little around the house, but cook. Mike needs a lot of sleep. I need relatively little.

When I write this all down, I wonder why in the world our relationship has a chance. Why we work so well together. And then I read the sentiment in the card...Mike loves the way we dream together. How cool is that? I dream of a day when life is a little less complicated, when money challenges don't overwhelm and when we can spend a day, a week, a month together sharing our dreams.

Happy Anniversary Mike! I love you more than you will ever know.

Sunday Night Fish Fry - Day 172

My work day moved slower than molasses. I think everyone must have been home watching the NFL Playoffs. I followed the score of the Colts/Jets on my IPhone to pass the time. Thank goodness the Colts won because the Super Bowl would be unwatchable if the Jets had made it. Mike hates the Jets and I would have been all alone with my Super Bowl snacks. After work I met Sandy for a quick walk around Crane's Roost. The route is only about a mile, but at least it is something. Sandy continued for another lap, but the fresh cod waiting to be fried was calling and I excused myself.

When I got home I cut some leftover Yukon gold potatoes in wedges, tossed with olive oil, fresh rosemary and salt and pepper. Then I popped it in the oven at 400 F for 40 minutes. While the potatoes roasted, I prepped the fresh cod I bought at Costco yesterday. I followed a recipe in David and Sheri's cookbook for Beer Battered Fish. One cup all purpose flour was mixed with one cup of beer to create the batter. I cut the fish into 4 x 1 1/2 inch strips, seasoned with salt and pepper and then coated with the batter. I fried it in small batches until golden brown, seasoned with salt and drained on paper towels. The fish and chips were accompanied by a cucumber and tomato salad and a tiny slice of flourless chocolate cake. It was all worth the revenge my tummy will torture me with tonight.

Sweet Success - Day 171

Tonight was Girls Night Out with my friend Susan and five of her female co-workers. We met at Macaroni Grill after work and then headed to Susan's for dessert and the movie Julie and Julia. Since one of her co-workers is gluten intolerant, I offered to bake a flourless chocolate cake. Judging by the empty plates and groans of approval, I think it was a success...a very rich, decadent, sweet success.

Flourless Chocolate Cake


Ingredients

* 1 pound semisweet chocolate, coarsely chopped
* 1/2 pound (2 sticks) unsalted butter, cut into 1/2-inch cubes, plus 1/2 tablespoon
* 1/4 cup Kahlua
* 8 large eggs
* 1/4 cup sugar
* 1 teaspoon vanilla
* 1/2 teaspoon salt
* Confectioners' sugar or cocoa powder, for garnish
* Fresh strawberries or raspberries, for garnish
* Whipped cream, for garnish

Directions

Preheat oven to 325 degrees F.

Using 1/2 tablespoon butter grease a 9-inch springform pan and line bottom with a parchment round. Cover pan underneath and along sides with foil and set in a roasting pan. Bring a medium saucepan of water to boil.

Combine the chocolate, butter, and Kahlua in a metal bowl set over simmering water or in the top of a double boiler. Melt the mixture, stirring constantly, until smooth and creamy, about 5 minutes; reserve.

Meanwhile combine eggs, sugar, vanilla, and salt in a large bowl and whisk with an electric mixer until frothy and almost doubled in volume, about 5 to 10 minutes. Fold 1/3 of egg mixture into chocolate mixture using a rubber spatula. Repeat this process 2 more times – until all of egg mixture has been folded into chocolate mixture.

Pour batter into prepared springform pan and place in the roasting pan. Pour enough boiling water into the roasting pan to come about halfway up the sides. Bake until cake has risen slightly and edges are just beginning to set, about 40 to 45 minutes. Remove cake from roasting pan and cool on wire rack to room temperature. Remove foil, cover, and refrigerate overnight.

Remove cake from refrigerator about 30 minutes before serving. Remove springform pan sides, invert cake onto a large plate, and peel away parchment paper from bottom. Reinvert cake on another large plate or serving platter and garnish with confectioners' sugar or cocoa powder immediately before serving.

Super Powers - Day 170

This morning I woke up with an angry salesperson hangover. I cannot seem to let it go. I even named my new Daily Sales Call Reports - "Diary of a Pissed Off Salesperson". Anger, frustration and grumpiness are feelings I do NOT embrace. I am more of a Pollyanna Positive, hugs and kisses kind of girl.

As I dressed this morning, I reached for another one of my most prized possessions...an antique cloisonne pendant given to me by my grandmother. This pendant holds amazing super powers. When I wear it I feel strong, powerful and able to solve problems with a single bound. Seriously, it is a symbol of all that is good and gives me a happy heart.

OK, I admit it. I am becoming a Brio Tuscan Tasters addict. When Mike asked me where I wanted to go for dinner. Brio was my first choice...even though I just visited the restaurant on Wednesday. We met at 5:15 and immediately began to pig out on Spicy Shrimp and Eggplant, a Brio Burger and Carpaccio...all $2.95 each. As if that weren't enough, I ordered my favorite mini dessert - Caramel Creme Brulee, also $2.95. Mike ordered the Chocolate Caramel Layer Cake. Everything was awesome as usual, especially Mike's cake. The frosting was amazing. I have to try to find the recipe online. Brio's Tuscan Tasters menu is a cash starved foodie's dream.

A day that began with angry sourness, ended with happy sweetness. The pendant worked its super power magic.

A Brick Wall - Day 169

Well the "Power of Good" just hit a brick wall. My boss decided that 1/21/2010 was a good day to implement a Daily Sales Call Report to document every move of the sales staff. He cited in the memo this was to make sure sales put in a full eight hour work day. I don't think he gave me nearly enough blank sheets. A full eight hours...ha, try a full 10-12 hours each day. This really upset me. It felt like my integrity and work ethic were being questioned. Both are a huge part of who I am as a person. Oh well, document I will. I ended up with four pages of entries for my 12 hour work day...plus a bonus 2 hours baking cookies for one of my customers. I just hope he sets aside a half hour or so each day to read my journal

I temporarily calmed my anger and frustration with a tasty "bad for me" lunch on the run. I drove through Zaxby's in Ocala for a Nibbler Snack Sandwich, Fried Pickles Snack and an order of Celery Sticks. The Fried Pickles are a new item and were as good as I have ever had at a sit down restaurant. Thank goodness I ordered the snack size. I definitely could have devoured more. Not a good idea for my waistline or my cholesterol.

As the day progressed I became more and more angry about the Daily Sales Call Sheet. I read the memo again and noticed the suggestion that the log could be used as a tool to redirect our schedules and possibly the way we do business. After reviewing four pages of accomplishments for the day, I realized he was right. I spend far too much time on work and need to get a life.

For dinner tonight leftover salmon took its final curtain call. I made a salmon salad melt, Italian wedding soup, a cucumber tomato salad and a far too tiny bit of red wine. Then I indulged in sweet therapy to quell my angst. I dusted off the cookie sheets that had been in hibernation for the last few weeks and baked a batch of cookies. I named the result "A Little of This, A Little of That Cookie" because the recipe was exactly that. To my base dough I added, David's Toasty Granola, Toasted Pecans and Walnuts, a mix of Dried Apples, Pears, Apricots, Peaches, Figs and a little cinnamon. The result was a cookie filled with fiber, antioxidants and comfort. I ate two over the course of the evening because comfort was something I definitely needed and they did the trick.

Tomorrow I think I will try going around or over the wall instead of ramming into it head on over and over again.

Power of Good Smorgasbord - Day 168

As a drove home from our Girls Night Out, I pondered what I would post about. My favorite postings are the ones I write during the course of the day. Today, however, I was too busy basking in the day's goodness to pick up a pen. It began early with a job pickup and then a breakfast appointment with my most important client...my husband. He surprised me by returning home just as I was leaving for the day and asked me to breakfast. Our time together is so erratic, I would have canceled anything to spend this time with Mike. We met at Mimi's in Altamonte with 50% coupon in hand. I had French Toast. Mike had pancakes. They were both delicious, but not at soul satisfying as our conversation.

Then I got busy running around Orlando with proofs. I had to work fast to make sure I would make it to Girls Night Out by 5:15. This was a night I looked forward to since last week. My friend Bree gave me a monetary gift before Christmas to thank my team for catering her rehearsal dinner. She wanted us to use it for a nice evening out. Tonight was the night and I thought it was only fair that she be included. I suggested Mom, Kenda and Bree meet me at Brio in Winter Park so they could experience the $2.95 Tuscan Tasters menu items. The inexpensive food prices left us more for wine and the $4.00 Wednesday martini special. We feasted on Margarita Pizza, Spicy Shrimp and Eggplant, Meatballs Polenta, Brio Burger with Homemade Potato Chips, Kaiken Malbec, Martinis and one tiny Caramel Creme Brulee. It was a wonderful evening and I still had $10.00 left to put toward our next time together.

Today was a smorgasbord of the "Power of Good"...good food, good drink, good friends, good work, good times. Good Night!

Defrost - Day 167

For some odd reason I feel like 2010 is meant for reaching out to others. So many of my friends and family are having personal challenges due to our crazy economy. They are either unemployed, in fear of unemployment, trapped in a job they hate or simply lost. They are so depressed...they are frozen. Unable to move. Unable to stick their big toe outside their comfort zone where personal growth happens. They are desperate to find the one thing that makes their heart sing.

My friends and family always tease me about my overwhelming need to "fix" people. I know in my heart I cannot "fix" anyone. Hell, most of the time I have challenges fixing myself. But I do think I can be part of the "defrosting" process. I can be a sounding board for venting frustration. I can listen. I can offer suggestions. I can nudge. I can butt kick. I can channel the "Power of Good" to help them find their way out of the frozen abyss.

Yes, that nagging "Power of Good" keeps haunting me. I think this is what I am meant to do in 2010 and I plan to start my mission immediately.

Well enough with the philosophizing and back to food. Karen, you were right again. I got another meal out of the leftover salmon. I flaked the last two salmon fillets into a bowl, mixed it with leftover dill mayo and onion for a really tasty salmon salad on toasted wheat bread. Very yummy! That makes three meals and counting from one large piece of salmon.

Bowl Full of Memories - Day 166

This morning my roommate Jim advised me that his daughter accidentally broke my orange bowl when she opened the cabinet to get her popcorn bowl. You would think my reaction would be - oh well, its just a bowl, of which I have many. But noooooooooo...I was distraught.

This bowl spilled over with memories. It was an orange Pyrex mixing bowl that was part of a nesting set given to me in 1979 as a shower gift by my grandmother. It was one of my most prized and well used possessions. I made and served my first meals in that bowl. I used that orange bowl and its smaller blue buddy for countless Gator viewing parties. This bowl assisted me through numerous HeartSong cookie batches. It was the perfect size...not too small, not too big.

Tears started to well up in my eyes. For goodness sake I thought, it is a bowl...a discontinued bowl, but a BOWL. A bowl full of memories which are still intact. How silly am I?! There is always Replacements,Ltd.

Karen Is Right - Day 165

This morning had a promising beginning with a little more skeedaddling and less loafing than the day before. I actually got out of bed before 9:00, showered, dressed and ate a bowl of freshly made David's Toasty Granola. I was worried that the toastiness would actually overpower the taste, but it held its own with the milk and fresh blueberries. I think the toasty taste would be great in a cookie. Hmmmm...I may have to work on that.

The lack of attention to my original HeartSong Cookies blog is getting the best of me. This morning I finally posted a promise of a heart healthy cookie.

In the few minutes left before work I actually packed up the last of my Christmas serving pieces. Yay...something finally was crossed off my gargantuan to do list! I felt rejuvenated and ready to sit on my butt for five hours at Costco.

Tonight's dinner was a salmon club sandwich made from the leftover salmon, bacon, shredded lettuce and dill mayo on toasted whole wheat artisan bread served with a bowl of crab corn chowder. OK Karen, I am getting kind of tired of saying you are right...but you are. I had fun making dinner at home and maximizing the leftovers.

Dinner By Kathy - Day 164

For some reason I had an extremely difficult time getting myself motivated for work this morning. I stayed in bed until after 9:00, took my time getting ready and begrudgingly headed out the door. My 12 -5 workday takes a huge bite out of my weekend productivity. In fact recently it had gobbled up the whole thing. Week after week I stare at the same things that need to be put away, cleaned or repaired...and I do nothing.

During my Costco workday I often jot down random thoughts and observations for my blog. Today Jeff, an observant Costco customer, stopped by to ask me if I was a psychologist taking notes. I explained my silly blog and he shared an awesome IPhone app recommendation - Dragon dictation. It is the perfect application for me - the perpetual blogger. Jeff showed me how it works on his ITouch. You simply speak into the microphone on your phone and the app translates your speech into an emailable document. How cool is that?! I just hope it is compatible with my antique IPhone. Thanks Jeff for the recommendation.

Today was the day for interesting customers. Besides Jeff and his family, I met Scott, an entrepreneur opening a new wine store in Oviedo in about 45 days. It is affiliated with Tim's Wine Market, a very cool wine store in Orlando. He took my HeartSong card and promised to give me a call when it opens. I will keep you posted. I met another gentleman who used to do business in Italy and spent a lot of time in Abruzzi where my wine is crafted. His description of the food, the wine, the landscape and the people made me want to hop on a plane right after work. If only I had a passport...and a purse full of money.

Mike called me right as I was wrapping up my work day to say he was coming home from Gainesville instead of staying the night. My plans quickly changed from cleaning and putting things away to creating a nice meal we could share together. I picked up fresh shrimp, salmon. salad fixings, whole wheat artisan bread from Costco and headed home. My attempt to light Jim's grill was unsuccessful, so instead I decided to cook the salmon in parchment with lemon, dill and sweet onions. While the salmon baked at 400 F for 20 minutes, I marinated the shrimp in orange juice, olive oil and Weathervane seasoning. Then sauteed them in a little olive oil and butter. After removing the shrimp from the pan, I added some of the OJ marinade and reduced it down to concentrate the flavor. I drizzled a little of the orange herb butter sauce over the shrimp and salmon...served it with salad and a slice of the delicious whole wheat bread. Since the salmon was a humongous piece of fish. I have plenty left over for Salmon Club Sandwiches tomorrow. Karen was right, cooking at home can be very rewarding.

After dinner I tackled one of the recipes from David and Sheri's cookbook. I made Granola. The recipe was quite easy and the smell as it was baking was intoxicating. I think I may have toasted the oat and nut mixture a little long, but it still is quite tasty. I added dried cranberries, dried cherries, dried blueberries, chopped dried apricots and peaches.

5 cups old-fashioned oats
1/2 cup canola oil
1 cup honey
1 teaspoon cinnamon
1 1/2 cups chopped nuts
2 cups dried fruit

Combine the oats and nuts in a 9x12x2 baking pan. Thoroughly combine the oil, honey and cinnamon and pour over oat mixture. Mix by hand until oats and nuts are well coated. Bake at 325 F for about 45 minutes, stirring every 15 minutes to toast evenly. When oats are cool, add dried fruit and store in air tight container.

Yields 10-12 servings

The great thing about this recipe is you can play with the combination of fruit and nuts. David suggests almonds, walnuts, raisins, cranberries, chopped apricots, dates or blueberries. He always includes crushed banana chips.

Dinner By Mike - Day 163

Yesterday my friend Karen pointed out that I need to cook at home more. She follows my blog religiously and feels I could go a long way toward financial independence if I actually stayed home. I agree! My challenge is an erratic schedule, seven day work week, a part time husband and a love of dining out. These all contribute to my bad habit.

At lunchtime as I sat in Seito Sushi waiting for my friend Kenda, I began to read the cookbook I received for Christmas from Sheri and David. The cookbook is a delightful compilation of recipes from David and Sheri's family and friends. Recipe after recipe made my mouth water and I love the tips and anecdotes. Karen is right. I have to find a way to stay at home more to nurture my love of food.

Unfortunately home cooking will have to wait until another day. Late this afternoon I jumped in the car for a client rush delivery to Tampa. Due to I-4 sink holes closing eastbound lanes, I knew I was in for an interesting adventure.

The I-4 delays were horrendous, so I had to get creative with my route home. I called Mike to see what he would like for dinner when and if I made it home. He told me he would think about it. An hour or so later, I called again. I needed something to look forward to. Mike said he was fixing dinner and I had an option of peanut butter sandwiches or...what he was actually fixing. I opted for option two.

My curiosity kept me company through two more traffic delays. Mike does not like to venture into the kitchen. He doesn't like to cook at all. I guessed our dinner would involve something that he picked up on the way home. By the fragrant waft of garlic I smelled as I walked in the door, I knew my favorite Leonardo's Pizza was on the menu for the night. To my surprise Mike had also picked up a salad nicely presented on a plate with a ramekin of dressing on the side. An ice cold Coke sat at my place setting beside a glass of crushed ice. He served me my warm slice of Greek pizza with garlic rolls on the side as I sat my butt on the sofa. This was the ultimate pampering and the perfect ending to my day. All Mike's thoughtfulness and attention to details meant more to me than he will ever know. Did I ever mention I have the best husband in the entire universe? I do!

Skeedaddling - Day 162

The word of the day is Skeedaddle. I have no idea what the Webster's definition is, but the Kathy definition is "to move quickly (with a smile on your face)". How could you not smile after saying Skeedaddle?

This morning after much frustration, aggravation, no skeedaddling and almost seven years, I finally changed the name on my checking account to my "new" married name. Yahoo...another long overdue step forward.

Today is Kat's birthday. And I took great pleasure in harassing my friend and co-worker all day with a Hoops and YoYo card, birthday serenade and e-mails and calls from many of our clients. She genuinely seemed to like the birthday clothes I gave her yesterday and even wore them today. Kat's wardrobe is almost devoid of color. She favors, black, brown, gray and cream. The teal cami looked quite nice, but took her a little out of her comfort zone. Kat loves hot sauce. To try to talk her into more color, I told her color accents could be the hot sauce to her wardrobe...a nice spicy touch.

My plans to mall skeedaddle again tonight with Sandy were squashed with an invitation from Chris, Tom and Susan for dinner at Seasons 52. This was an offer I couldn't refuse. I LOVE Seasons 52 and have not dined there in quite a while due to cash depravity.

Dinner was fun with great conversation and good food. It was easy to keep to the week's heart health theme at Seasons 52. All their menu items are under 475 calories. I ordered a bowl of Shrimp and Crab Cioppino Soup, a Mixed Green Salad and Pecan Pie Mini Indulgence for dessert. Tom ordered a bottle of Schug Pinot Noir wine from Sonoma County for the table. Everything was delicious. I savored this time spent with my good friends before skedaddling home to walk Maddie and blog.

A Few Steps Forward - Day 161

I finally took a few steps toward some sort of exercise for 2010. I revived my mall walking with Sandy. It has been months since we got together to walk and talk. Tonight we finally did a little of both as we circled the upper level of the mall three times. Believe it or not, I actually got tired during our 30 minute trek. Oh my, am I out of shape! I must remind myself...it is the little things that make a difference.

After the walk I ran errands and stopped at the Panda Express drive through for a Panda Bowl with steamed rice and Sweet Fire Chicken Breast. I am sure this totally negated any good I did with my walking. At least I tried to save a little fat with the steamed instead of the fried rice. After all, it is the little things...

The Little Things - Day 160

Today we had an early morning sales meeting. I didn't get out of the house in time to have breakfast at home. So I picked up coffee and oatmeal from Starbucks in route. Usually I get my oatmeal loaded - brown sugar, dried fruit and nuts. I am constantly saying it is the little things, the details that make the difference. Unfortunately I don't follow this advise in my diet or my budget. I guess that is why I am in debt and overweight. Today I ordered my oatmeal without brown sugar...only dried fruit and nuts. I know foregoing the brown sugar didn't amount to a huge calorie savings, but a little here and a little there equals a pound. To be honest, the oatmeal actually tasted better naturally sweetened with the dried fruit. And next time, I will get up five minutes earlier to make the oatmeal and coffee at home. Then I will be $4.00 wealthier as well.

My boss brought in boxes of muffins and Danish to our morning meeting. My will power held steadfast throughout the morning. And then...it got closer and closer to lunchtime. The apple cinnamon muffin yelled out to me every time I went past. Finally I gave in, wrapped the muffin in a paper towel and headed out the door for lunch. I ate the whole damn thing on the way to pick up a salad at Super Target. I am addicted to the California Chicken Salad from the Target deli. I know I have blogged about this salad before, but it bears repeating. For $3.99, this is a great salad - mixed greens topped with grilled chicken, walnuts, dried cherries, two slices of goat cheese and poppy seed dressing. Yum!

It is funny, tonight on my way home I turned the radio to The Jack Del Rio Show (coach of the Jacksonville Jaguars). He was discussing their season and he said the difference between "good" and "great" is a lot of little things. Hey, that is the theme of the day!

Healthy Heart Beginning - Day 159

The day began with a press check with Margaret and Jarrod and then on to breakfast at Mimi's Cafe. I tried my best to live up to my promise of heart healthy choices this week. Still...I was a little bad. I ordered two eggs fried hard. They came with a low fat blueberry muffin, home fries, orange juice and coffee. I saved the muffin for later. Mid afternoon lunch was the fruit and cheese tray from Starbucks and another cup of coffee. For dinner I made a Tuna Panini and Healthy Choice Chicken Rice soup. The panini recipe came from the latest edition of Cooking Light magazine. It was low on fat, but high on taste and very simple to make.

Tuna Panini


3 T. finely chopped red onion
3 T. organic canola mayonnaise
1 tsp. grated lemon rind
1/4 tsp. fennel seeds, crushed
1/4 tsp. freshly ground black pepper
2 (5 ounce) cans albacore tuna in water, drained and flaked
8 slices sourdough bread
4 (1/2 ounce) slices provolone cheese
Cooking spray

1. Combine first seven ingredients in a medium bowl, stirring well to coat. Place 4 slices of bread on a flat service. Top each with a slice of cheese. Divide tuna mixture evenly between the bread slices. Top each serving with the remaining bread slices.

2. Heat a large skillet over medium heat. Lightly coat sandwiches with cooking spray. Place sandwiches in pan and top with a panini press or another heavy skillet. Cook 3 minutes on each side or until lightly browned.

Serves Four.

I only made two sandwiches and saved the rest of the tuna mixture for another day. The fennel seeds and lemon zest added a nice flavor to the tuna.

Guilty Pleasure Indulgence Week Finale - Day 158

This morning was exceptionally chilly for Florida. It looks like my feeble attempts to cover my plants did not work. All the beautiful crotons were sad and droopy. When I got up, I lit a fire in the fireplace, brewed hot tea, toasted bagels and read the Sunday paper with Mike. Then it was off to work. I made another stop at Starbucks on my way in. This time the coffee stayed in the cup instead of my sweater and actually went a long way to keeping me thawed out in a very chilly Costco.

You know I never tire of watching people. I love watching the way they react to the new products at Costco. People come in all shapes and sizes, but as diverse as they look, their behavior is amazingly similar. A display of granite topped bathroom cabinets was set up right next to me, along with a glass shower enclosure and a swivel chair outdoor seating grouping. Almost everyone that walked by paused to pat the granite, open the drawers and doors of the cabinet, slid open the shower door and then plopped down on the swivel chair for a quick spin. It was really kind of comical.

Today Crucy, one the the CDS demonstrators, served tastes of Kirkland Wholesome Fruit and Nuts - a mixture of dried cranberries, dried cherries, almonds, walnuts and dry roasted pistachios. She got me hooked with an extra full cup. I decided I am going to make an oatmeal, fruit and nut cookie out of it - filled with fiber, whole grain, antioxidants and minimal fat.

Today is the final day of Guilty Pleasure Indulgence Week. The grand finale dinner included pan seared thin cut pork chops, braised red cabbage, stewed apples and potato cheese pierogies, served by the fire with a glass of Montepulciano. I think this eastern European themed dinner was one of the best I have made in a very long time. Mike seemed to really enjoy everything...but the cabbage. He did not even try it. He did however have three pork chops. I had one pork chop and two servings of cabbage. It was delicious. I used a recipe from my Whole Foods iPhone application.

Red Cabbage

1/3 cup canola oil
4 T. sugar
1 medium onion, diced
3 cloves garlic, chopped
1/3 cup red wine vinegar
1/2 cup chicken stock
1 head red cabbage, sliced and cored
2 Gala apples, peeled, sliced and seeded
1/2 lemon, juiced
1/2 tsp. caraway seeds
4 whole cloves
1/2 tsp. ground black pepper

Heat oil over medium-high heat in a large pot. Add sugar and cook until dark brown. Carefully add onions and cook 5-10 minutes until well browned. Add garlic, cook 2 more minutes. Deglaze with red wine vinegar. Add chicken broth, cabbage, apples, lemon juice, caraway seeds, cloves and black pepper. Cover and cook 30-45 minutes or until cabbage is tender. Season to taste with salt and pepper.

The pan seared pork chops I served were very simply prepared. I sprinkled with sea salt, pepper and Weathervane seasoning from A Southern Season in Durham, NC. Then I cooked in a hot pan coated with olive oil for a 3 minute sear on each side.

The stewed apples were another simple dish. I peeled, cored and sliced Gala apples and cooked them with 3 tablespoons melted butter, a couple of tablespoons of brown sugar, a sprinkling of cinnamon, nutmeg and cloves.

The pierogies came from Costco and were actually the inspiration for the meal. They come precooked, but I browned them in butter and served with a dollop of sour cream.

Sadly, Guilty Pleasure Indulgence Week is over, but it went out with a bang.

Next week's theme is Healthy Heart. Fish, fruits, veggies, smaller portions, vitamins, walks and lots of happiness will be in abundance.

Wearing My Starbucks - Day 157

Today was bustling at Costco. Everyone looked so cute all bundled up. I stopped for a Grande Starbucks coffee on my way to work and ended up wearing it all over my sweater and pants as I got out of the car. Thank goodness for my scarf fetish! I strategically wrapped the scarf around me so that very little of my faux pas was visible. Of course being the goofball that I am, I pointed it out to almost everyone that I spoke to.

The bustle made for a fun work day. Several of my friends stopped by to talk and I met a new friend, Joe. A conversation that began with wine talk, ended with thoughts shared about his wife that passed away several years ago. Joe's wife, Regina was a fellow foodie who found solace in cooking. Joe promised to share her pumpkin cookie recipe with me so I can feature it on my HeartSong Cookies blog. I really hope he does.

Dinner was comfort food - lobster bisque and fried egg sandwiches. After dinner as a special treat I braved the cold for a Starbucks run. I picked up cafe mocha coffees for Mike and Jim, hot chocolate for Brenna and a grande coffee for me. This time I drank it instead of wearing it. Since this seems to be the week of indulgences, I picked up apple pies from McDonalds for the gang and a cup of ice cream for Maddie, our dog. Everyone seemed content and life was good.

Tuscan Tastastic - Day 156

Last night Mike got home too late for our trip to Brio, but tonight we were able to meet for an early dinner. Brio now offers a Tuscan Tasters Bar Menu. The items are available in the bar only Monday through Friday from 3-6 p.m. and from 9:00 p.m. til close. All items are $2.95. We weren't quite sure how large the portion size would be, so we decided to try three items -

Braised Meatballs & Creamy Polenta
Topped with Marsala tomato sauce, Reggiano and parsley

Sausage & Pepperoni Flatbread
Fresh Mozzarella and housemade tomato sauce

Sliced Steak Bruschetta
With Gorgonzola Dolce, arugula, fennel, charred tomato, shaved Parmesan and Tuscan Italian dressing

Two items would have been plenty for the two of us. The Braised Meatballs & Polenta were out favorite item. Three medium sized, nicely spiced meatballs were served over a delicious cheesy polenta. The flatbread was about an 8" square and was topped with good tomato sauce, pepperoni, sausage and dollops of ricotta cheese. The Steak Bruschetta consisted of four crostini topped with thinly sliced beef tenderloin and the other tasty toppings mentioned above. All three were very good. The table next to us ordered the Brio Burger also on the Tasters menu. It was served with housemade potato chips. They commented on how good it was as well. The other Tasters items include Beef Carpaccio, Spicy Shrimp and Eggplant, Margherita Flatbread, Shrimptini and Roasted Red Pepper & Fresh Mozzarella Bruschetta.

Mike and I enjoyed drinks, coffee and mini desserts which ran up our tab to $38.00, but two could easily dine with two tasters, coffee and even dessert for under $20.00. The service was impeccable. Two servers tag teamed us throughout the evening. We were never rushed and stayed for a couple of hours. The manager stopped by to ask us how we enjoyed everything. All in all, this was one of the best dining experiences we have had in a while. I would definitely recommend this as a way to experience an indulgent evening out for the cash starved.

A Day of Guilty Pleasures - Day 155

This morning began my full day of indulging guilty pleasures with a trip to the new Bojangles in Altamonte for a Cajun biscuit and hot coffee. Bojangles is extremely popular in North Carolina where my son is currently living. The biscuit stop somehow made me feel a little closer to him. Plus, it was extremely tasty.

I had business to do today in Leesburg, Ocala and Gainesville. My travels put me in front of Leonardo's Pizza by the Slice in Gainesville at about 2:00. Since it was Guilty Pleasure Indulgence Day...I headed in for a slice of the day's special spinach artichoke thin crust. It was covered in artichokes, cheese, fresh spinach and has almost overtaken their Greek pizza as my favorite ever.

How can I top the awesome, very fattening choices of the day with dinner tonight? With plans to visit Brio in Winter Park after 9:00 for their $2.95 bar menu tastings. Mike had bowling practice in Gainesville with the team and is expecting to make it back to Orlando a little after 9:00. I am waiting for a call to check his progress. If he is too late, we may wait to try Brio tomorrow. The bar menu is also offered late afternoon until 6:00. Either way, I will let you know how it is.

Irrelevant Musings - Day 155 1/2

Yesterday my son sent me his latest work accomplishment - the link to his NC State Women's Tennis Media Guide http://www.gopack.com/fls/9200/YEARBOOK/2009-10/2009-10%20Women%27s%20Tennis%20Yearbook/index.html. Sadly, as a budget cutting move, many colleges are refraining from actually printing their media guides...opting instead for the virtual world of the Internet.

While I found the program that allows you to "turn" the pages like an actual booklet very entertaining...I found myself wanting more.

I wanted to hold the media guide in my hand. I wanted to run show it to my co-workers and drop one off to my mom on my way home. I wanted to use it as a tool to interact with PEOPLE, not alone with my computer. I wanted to lie in bed and read its content to learn more about the girls on the team. Then I could surprise my son with my infinite knowledge and ask relevant questions about the team.

As it is, I may go back to the link once or twice. I will pass it on to my mom via impersonal e-mail. But this media guide will never reach its full potential. It will sit in a link in cyberspace.

It will never cause people to actually interact. It will never be physically handed off from one person to another. It will never be studied. It will never be treasured and pulled out of a trunk to share with another generation. Isn't it a shame? I guess that is the price of progress.

Sushi with Friends - Day 154

I have been looking forward to tonight all week and it finally came. My friend Carolyn and her mom invited me to dinner at Seito Sushi in Baldwin Park. Carolyn's mother is from Japan and I love spending time with her and Carolyn. They both have a relaxed calmness that is a refreshing change from my daily craziness.

Seito recently expanded and has a very contemporary, yet comfortable decor. The menu is diverse with many options. Since it was chilly I ordered Udon Noodle Soup with Tempura. Carolyn got a Bento Box with Spicy Pork and Teriyaki Salmon. Carolyn's mom ordered a deluxe sushi platter. Then we all shared. Or should I say...they shared with me. We talked and laughed and feasted. And when I was driving home, it hit me again. I am the richest person around. I have been blessed with wonderful people in my life.

Time Alone - Day 153

Tonight I was home alone and kind of enjoyed it. I heated up leftover whole wheat spaghetti with Italian sausage, made a salad, poured a glass of wine, lit a log in the fireplace and plopped down on the couch with a food tray in my lap to watch Food Network. I watched the end of Paula Deen and an entire episode of Rachel Ray's 30 Minute Meals. Rachel Ray is so overexposed that she kind of irritates me, but the low fat meal she was making sounded pretty good. She took sea bass and baked it in parchment with green onions, shitake mushrooms, fresh ginger slices and fresh garlic slices. I tend to overcook fish when I prepare on the stove top, so I thought this may be a great way to preserve the moisture and control the fat. She served it with a lemon chive pasta that also looked good. I am sure both recipes are posted on the foodnetwork.com. I may try this over the weekend and will post the recipes if they are post-worthy.

Souper Day - Day 152

I hate turning on the heat! Putting on snugly clothes, drinking warm coffee, slurping yummy soup, lighting a fire in the fireplace and wrapping myself in a throw are much more appealing options. And since our downstairs air handler needs to be replaced, turning on the heat downstairs in not an option anyway. So...this morning it was 58 degrees downstairs. I bundled up, brewed a pot of coffee, toasted a bagel and quickly headed out the door.

For lunch I needed something warm and easy on the wallet. Einstein Bagels offers a cup of soup and your choice of bagel for $2.99. Soup choices include Turkey Chili (my choice), Broccoli Cheddar or Chicken Noodle. It was the perfect choice for a cold, cash starved foodie.

Thank goodness I don't have to make a living like the poor unfortunate soul I saw standing on the corner in an inflatable Planet Smoothie costume.

My friend Jen brought her almost finished guitar masterpiece to work. Oh my goodness, it is gorgeous. Check it out at http://shapoka.blogspot.com - the link to Jen's Art Blog. She is taking it on "The Rock Boat" cruise this Thursday and plans to have the participating bands sign the back. She "painted" the guitar with crepe paper collage and created the details with permanent marker. The final result is so cool. The hours she put into this are too many to count. The look of pride on her face was priceless.

Since soup was the theme of the day. Mike and I decided dinner at Sweet Tomatoes with our BOGO coupon was a great choice. The Albondigas Locas Soup and Split Pea and Barley Soup were both delicious. I still think Sweet Tomatoes does one of the best marketing jobs around for an inexpensive dining restaurant chain. As I have mentioned many times before, you really should sign up for Club Veg at their site - www.souplantation.com. Coupons will be e-mailed to you several times a month. With the BOGO coupon, two can dine out for dinner for $15.38. The soups, breads and dressings are all made from scratch. Tonight I discovered their site includes complete nutritional information...great for diet resolutions.

Back to Work - Day 151

The lazies continued with a 10:30 climb out of bed. I barely allowed myself enough time to get ready for work and grabbed a bagel and soup from Einstein's along the way. I think the Costco customers also had a case of the lazies because they were few and far between. I was totally bored most of the afternoon and passed the time setting my goals for 2010.

The cold weather had me in the mood for something warm and comforting for dinner. I made spaghetti with Italian sausage, started a fire in the fireplace and poured a glass of Montepulciano. This was the exclamation point on an excellent weekend!

Aaaaaah...A Goof Off Day - Day 150

This morning Mike and I stumbled out of bed around 9:30 and took our time getting ready. Then we headed for brunch at Brio in Winter Park. We arrived around 11:00 to an empty restaurant and settled in the bar so we could watch the High School Under Armor All-Stars to see who committed to the Gators. Yes, I know, we are Gator obsessed. Brunch was delicious. I opted for the Frittata made with angel hair pasta, eggs, Fontina cheese, spinach and bacon. Mike ordered the sausage crepes. We drank a gallon of coffee, polished off our entrees and headed back out in the cold, crisp air. I love days like today. The sky was a cloudless clear blue. The sun was out, but the air was cool. I took Mike home and decided I wanted to go shopping instead of cleaning. Off I went to Marshall's and found a few great buys that fit within my teeny tiny budget.

Tonight Mike and I continued our goof off day with a rare trip to the movies to see Sherlock Holmes. It was good and definitely made to be a sequel. More Robert Downey Jr. and Jude Law is always a good thing. For dinner I made grilled roast beef and Swiss cheese sandwiches and warmed up the last of the corn chowder from earlier in the week.

I am a crazy person that believes I always have to accomplish something each day. At the end of this day, I started to feel a little bad when I looked around the house at all my unfinished projects. And then I paused...I accomplished the greatest task of all. I relaxed...I goofed off...I had fun. Aaaaah!

Geaux Gators! - Day 149

Wow! How sweet it is! Tonight Mike, Chris and I went to BJ's Brewhouse to watch the Gators play in the Sugar Bowl. What a wonderful night we had! We ate about as much as the Gators scored. It was the perfect finish to a New Year's Day that was mostly spent as a "bed potato" watching bowl games and recovering from last night's celebration.

Ringing in the New - Day148

2009 had many ups and downs and twists and turns. Unfortunately the downs at times overwhelmed the ups and made me lose track of just how fortunate I am. I love the new year. It gives me the opportunity to set new goals and dream new dreams. Tonight we rang in the new year with our good friends, Tom, Susan, Chris, Tom's sister Kay, her boyfriend and his 97 year old mother. It was quite a lively group.

Susan outdid herself with the food. We had beef tenderloin thumb bits, mini pizzas, mini sloppy joes, pigs in a blanket, dried beef dip and crackers, salad, mac and cheese, meatballs, chocolate dipped Oreos and pretzels. Oh, and a little wine. We sat outside by the fire pit and talked and drank a little more wine. Then we toasted in the New Year with a glass of champagne. Since Mike is not a wine drinker, he was the designated driver. It was a wonderful way to ring in 2010...and then I went home and prompted purged all remnants of 2009. I got sick as a dog. Happy 2010! Good riddance 2009!!!!
